Staying warm on a cold January day


As you wake up to this cold January morning, I thought I'd post some delicious hot chocolate recipes to keep you warm throughout your day. Coffee & tea works just as well, but lets be real... there is something about a warm cup of cocoa that is indescribably comforting on such a bitter day. Try these easy & delicious home made recipes I have collaborated from various sites:

Whipped Hot Chocolate:
Ingredients
  • 1 cup milk
  • 1/3 cup white sugar
  • 2 tablespoons sweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 (1 ounce) squares semisweet baking chocolate, broken into pieces
  • 1 cup heavy cream
Directions
  1. Heat milk in a small saucepan over low heat until the milk begins to steam. Whisk in the sugar, cocoa powder, vanilla extract, and salt until dissolved. Stir in the chocolate until melted. Remove saucepan from heat, and allow to cool slightly.
  2. Beat the heavy cream in large mixing bowl with an electric mixer until stiff peaks form. Gently fold the whipped cream into the hot chocolate. Serve immediately.
Maple Hot Chocolate:
Ingredients
  • 1/4 cup sugar
  • 1 tablespoon baking cocoa
  • 1/8 teaspoon salt
  • 1/4 cup hot water
  • 1 tablespoon butter or margarine
  • 4 cups milk
  • 1 teaspoon maple flavouring
  • 1 teaspoon vanilla extract
  • 12 large marshmallows
Directions
  1. In a large saucepan, combine sugar, cocoa and salt. Stir in hot water and butter; bring to a boil. Add the milk, maple flavouring, vanilla and 8 marshmallows. Heat through, stirring occasionally, until marshmallows are melted. Ladle into mugs and top each with a marshmallow.\
Peppermint Hot Chocolate:

Ingredients
  • 1 cup chilled heavy whipping cream, divided
  • 1 teaspoon plus 2 tablespoons sugar
  • 2 cups whole milk
  • 4 ounces bittersweet (preferably 60% cocoa) chocolate, coarsely chopped
  • 1/4 teaspoon peppermint extract
  • 4 small candy canes (for garnish)
Directions

Beat 1/2 cup cream and 1 teaspoon sugar in bowl until soft peaks form. Cover; chill. Whisk 1/2 cup cream, 2 tablespoons sugar, and milk in medium saucepan over medium-high heat; bring to boil. Remove from heat. Add chocolate; whisk until smooth. Whisk in extract. Divide chocolate among mugs. Top with cream and garnish with candy canes.

Banana Hot Chocolate:

Ingredients
  • 1 medium banana, about 2 1/2 ounces
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 5 ounces good-quality milk chocolate, coarsely chopped
Directions
  1. In a blender combine banana, milk, and cream. Blend on high until smooth, about 30 seconds.
  2. Strain banana mixture into a small saucepan over medium heat and cook until simmering, about 4 minutes.
  3. Add chocolate and whisk until completely melted and well incorporated, about 2 minutes. Serve immediately.
Baileys Irish Cream Hot Chocolate:

Ingredients


  • 300ml of milk




  • 25g of dark chocolate




  • 50ml of Baileys Irish Cream




  • Directions
    1. Boil 300ml of milk
    2. Pour half the milk into a jug with 25g of dark chocolate
    3. Leave to soften and whisk until smooth
    4. Add 50ml of Baileys and the rest of the milk
    5. Whisk again
    6. Pour in to two heatproof glasses
    7. Top with whipped cream and chocolate curls

    Spiced Hot Chocolate

    Ingredients
    • 3 tablespoons instant hot chocolate mix
    • 1 tablespoon chocolate syrup
    • 1/2 teaspoon ground cinnamon
    • 1 pinch chili powder
    • 1/4 cup milk
    • 3/4 cup boiling water
    Directions
    1. In a large mug, mix the hot chocolate mix, chocolate syrup, cinnamon, and chili powder. Pour in the milk. Add the boiling water and stir.

    I'm not much of a fan of the winter & the snow... I definitely try to make the best of it while its here, but for some reason it just drags! I am hands down a summer girl, anyone that knows me, knows they'll find me on the beach as long as the suns out and its above 20 ( above 15 if its May & I'm over excited). I wanted to bring a little warmth into every ones January by creating some fun & exciting new treats! What could bring back memories of summer better than a BBQ?
    First of all, for all you "New Year's Resolutioners", these treats are GREAT portion sizes! Remember- it is very important not to deprive yourself completely of all treats, but rather more beneficial to limit the amount you consume. People that limit the amount are more successful with balancing a healthy lifestyle if they minimize sweets instead of cutting them out complete. Lets face it, cutting out cupcakes entirely is just setting yourself up for failure. Myself, I taste test every single recipe that I try (to ensure top quality products of course) and I maintain a fairly healthy lifestyle at the same time (between eating healthy meals & working out). It's also very important to eat breakfast, I know this because I never used to. I now have a particular breakfast shake I have every morning, it's super healthy and hard to believe a cake enthusiast would ever drink such a thing, but I've grown to like it (I will post the recipe for you next time). Perhaps one of the main reasons this shake works for me is because it contains 'Body By Vi' which, for anyone that's tried that product knows it tastes like CAKE!! Basically what I'm trying to say is, I like to have my cake...and eat it too, and why shouldn't you?
    Beside amazing portion sizes, these treats are ADORABLE don't you think? I mean mini cupcake shooters & cupcake kebabs? I fell in love with these ideas the second it crossed my mind. I also have tons of other fun & creative ideas to add later on. These treats are great for any type of event and can come in an assortment of flavours & colours!      As much fun as it is to decorate and dazzle up an edible piece of art, I thoroughly enjoy the whole baking process= minus the clean up. I love the whole concept of being able to experiment with fun flavours and combine unique ingredients to create a delicious (cup) cake. The combinations are endless and I get super excited when I have spare time to turn my kitchen into a cake lab and pair up fun flavours & ingredients. My favourite cake show right now is Cupcake Wars, solely because of the first challenge where the contestants are given (mostly) repulsively odd ingredients (which, it makes me cringe at the thought of corrupting a perfectly innocent cupcake). The contestants on the show are incredibly talented and (for the most part) are able to pair the odd ingredients appropriately to result in a delicious cupcake. For some ingredients, there is no partner in the world that could bring out the best in it, (note: the same concept could apply to men) and therefore it’s beneficial to know your own creative boundaries. There was a guy on last week’s episode that really wanted to "go all out" and resulted in an (epic) fail by adding a slab of tuna to his cupcakes and real mayo as frosting? Even if you love seafood: fish+cupcake= disaster. This leaves me with the question: What is the most creative/unique cupcake you’ve made or eaten & how did it turn out?

    Welcome to Chick Boss Cake! 


     I am excited to finally have my site up and running for business. It has been quite the process to get organized and settled, but I am looking forward to get to the fun stuff, hop into the kitchen and get my hands on my most prized possession- my Kitchen Aid mixer. What a wonderful invention: allows you to mix the perfect ingredients to create something much better than all the ingredients would have been on their own, in a timely fashion AND enables you to multi-task ALL at the same time. If only dealing with men were that simple. Oh, and the Kitchen Aid mixer also has a plug, which I have come to discover my partner did not come equip with-manufacturing malfunction. Although I do think a plug would be a fantastic accompaniment to partners world wide, I really do love him. He has been such a great support while setting up this whole baking business (eating sample, after sample, AFTER sample). Then he tells me I need to pick him up new jeans a couple sizes bigger...lol. Life is fun! 


     I am glad to have you all join me along my cake baking journey, I look forward to blogging throughout my orders and providing you with tips, tricks and a laugh or two. Thank you to all my close friends & family who have been there to support & encourage me!
